No other winery in Italy is so closely linked to the origins, history and the whole path of its denomination as Biondi Santi Al Brunello di Montalcino. A story that has its roots in the nineteenth century, with the first trials of winemaking by Clemente Santi, the one who devoted much of his life to the study of sangiovese and who saw his “chosen red wine” - in fact Brunello - awarded at the Universal Exhibition in Paris in 1865. A journey that has not stopped since then, and that has consecrated the winery as undisputed leader of the whole area the Chinese, an example of tradition to which everyone still looks with admiration today. The wines that come out every year from Tenuta Greppo are, in fact, still today considered as some of the greatest wines in the world, models of elegance and longevity. With plants that, in some cases, even exceed eighty years of age, Tenuta Greppo can count on a vineyard extension of twenty-five hectares, in which only and exclusively Sangiovese grosso plants meet. The yields per hectare are very low, and were between 30 and 50 tons, with an annual production rarely exceeds 80 thousand bottles, including 10 thousand bottles of Brunello di Montalcino Riserva, produced only in vintages quality exceptional. In the cellar, only the first choice grapes arrive, from vineyards that are at least ten years old for the vintage Brunello, and from plants over twenty-five years old for the Reserve. Then the processing, which begins with destemming, followed by pressing and fermentation, takes place in vats and cement tanks at controlled temperature. Finally, after the malolactic fermentation, the aging begins in large Slavonian oak barrels, and finally the bottling, which takes place no earlier than four years after the harvest. A few simple steps, in the sign of the most rigid and essential of traditions, for a Brunello, that of Biondi Santi, which meets its secret in its oldest origins, over the centuries renewed from season to season, towards an international prestige and fame that to date knows no limits.
