The Abbey of Novacella can safely be considered as a kind of Temple of Viticulture of the Isarco Valley: here it has been producing wine for centuries, since 1142. The centuries-old experience, combined with the latest technologies and the passion of those who collaborate in the vineyard and cellar, make the wines of the Abbey of Novacella rich in personality and character. It all starts with the selection of wines, carefully selected by the winemaker or the “chef de cave”, which already while choosing wines themselves, have clear in mind what will be the cuvée final, the daughter of their skilful blend, thanks to which each Sparkling wine will express certain and peculiar characteristics. This is the starting point of what is better known as the “Classical Method”, that after the first fermentation, the addition to the wine - specifically made responding to precise parameters and, above all, the product with high levels of acidity - the “liqueur de tirage”, which is a syrup made from wine, sugar, minerals, and selected yeast, which gives rise to a second fermentation in the bottle. The stage of the “draw” for the fact is that the addition of the “liqueur de tirage”, then the “foam”, corresponding to the second fermentation in the bottle, the latter is constantly monitored by looking at the atmosphere, and more will be slow and most of the foam will be persistent and fine. At the end of the second fermentation, the wine will then continue to stay in contact with yeasts for a shorter period, during which the yeasts themselves are often put back into suspension, so as to release the typical scents characterizing the classic method to the wine. Finally, with the disgorging, are discarded, the sediment produced by secondary fermentation in the bottle, and is added to the “liqueur d'expedition”, which is determined by the sugar content of the Sparkling wine, and then the subsequent mention of Extra Brut, Brut, Dry, Extra Dry..., up to the Pas Dosé or Brut Nature, which involves the addition of a “liqueur d'expedition” in fact corresponding to the same wine to the Sparkling wine is not without the addition of sugars, thus remaining “natural”. Agricole Vallone is a historic Apulian winery, founded in 1934 and today led by a team of young and brilliant professionals under the guidance of Francesco Vallone. The working approach in the management of the vineyards and in the management of the wine production process is closely linked to the traditions and identity of the territory, to which the Walloon family has always remained faithful. The Notaroberto family, originally from Futani, lives in Luxembourg since 1984 and has thirty years of experience in the agri-food world. Having planned to return to Italy, he has planned investments in the tourism/agronomic sector and cattle breeding. To this end he chose the town of Centola as a place of investment. A first investment was made in 1990 with the acquisition of a land of about 3 hectares in closed locality. The vine planted is the White Berry Fiano, typical of our areas. In 2010, another 2.5 hectares of Mediterranean maquis were purchased in the same area and, after the appropriate authorizations, another vineyard was removed and planted, which will go into production from 2013. In this case it is grapes from Aglianico, another typical vine of our areas.

The Maison "Albert Pic & Fils" is one of the oldest wineries in the French Chablis region, having been founded shortly after the middle of the eighteenth century, in 1755 to be precise. After centuries of extraordinary white wines, the winery became the property of Baron Patrick De Ladoucette, who invested a lot of resources equipping the cellar with state-of-the-art equipment and technologies. The peculiarity of the “Albert Pic & Fils " winery is the exclusive focus on the Chablis, the great white wines that best represent the typicality of the region. The vineyards of the property are located in the areas with the greatest vocation for Chardonnay. The history of the winery began in 1934, when Lorenzo Mottos and Riziero Camellini decided to aggregate initially seven, and later twelve tenants of Lambrusco and Ancellotta to create a new model of production in a territory with a strong agricultural vocation as the hills that extend south of Reggio Emilia. Around this idea gradually joined many producers, who, in 1936 officially gave life to the winery Albinea Canali. The success was such that in the following decades there were one hundred and seventy lecturers. The company is located in Rutino in Cilento, in the province of Salerno. The Rotolo family has lived with wine for three generations and the first vineyard (still in production) was planted by his grandfather in 1938, using the first "American"vines. Currently, the company covers about 7 hectares of vineyards all bred in guyot with low production per strain and per hectare, enrolled in Doc Cilento Aglianico and Fiano and IGT Paestum and Campania. The winery is equipped with the most modern equipment, necessary to best express the potential of the grapes, and the analysis laboratory for the capillary control of each batch of both grapes and wine. Alfonso Rotolo produces about 60,000 bottles and personally follows all the phases of production, with the passion and dedication typical of the peasant culture, with extreme professionalism and competence, daughters of his studies of enology. Rololo has chosen to breed only two Native vines such as Fiano and Aglianico because he firmly believes in the great potential of these grapes.
