Jack is not yet 16 years old when he becomes the owner of the first distillery and, starting from a base of corn, rye and barley, signs his first bottles of bourbon. By applying the traditional system of 'sour mash' (that is, the continuation of a must-rich live yeast in the bottom of the fermentation vat), Jack introduces a novelty at the end of the production process: the filtration of the distillate to the final through coal, hard maple, which makes the product more soft and smooth even before the aging in barrel. At his death, in 1911 due to gangrene due to kicks given by Jack to a safe of which he did not remember the combination, the distillery, which has already obtained important awards, passes into the hands of his nephew who runs it until after the war.
