TASTING NOTES.
Color: Clear and limpid
Nose: Opens the nose to vegetal aromas of moss, tomato leaf and resins, pine needles and Mediterranean scrub, with hints of rosemary and baked black olives, along with some orange peel
Palate: The palate is an explosion of juniper and coriander, then veers into the bitter vegetable of herbs, with distinct hints of rosemary and basil, rightly balanced by citrus freshness, in a long finish that hints of cardamom and green olives
DESCRIPTION: The citrus is macerated for a long time, more than 300 days, while the other botanicals are steeped separately for about 36 hours and then distilled. Distillation takes about 4 1/2 hours. 200 liters are distilled at a time; in the first hour and a half, the ideal temperature of about 80 degrees is reached and the first 5 liters of head are discarded, kept approximately 105 liters of heart and finally discarded 90 liters of the distillation tails. During the 6 different distillations, neutral spirits and water are mixed.
