THE MANUFACTURER: The Bonollo family began experimenting with the centuries-old art of making grappa as early as the nineteenth century in the Vicenza foothills of the Alps. The first evidence of the professional activity of distillers dates back to 1908, the year to which the oldest production report of which we have a copy is traced. It was in that year, in fact, that Giuseppe Bonollo, the progenitor of the most important grappa dynasty in existence today, set out with the then innovative steam stills, which made it possible to produce a grappa with better organoleptic characteristics than the traditional one. Over the years, the Bonollo family made significant investments both in research and development at the production level - the Bonollo Unique System was born, which aims to optimize all stages of the process, from the selection and harvesting of the pomace to the final distillate - and in terms of packaging, communication and distribution. The first tangible fruit of this commitment occurred in 1999 when the first bottle of Grappa Of Amarone Barrique was obtained: a grappa that was able to propose a new and innovative type of product, capable of conquering broader and more diverse groups of consumers and breaking the rigid and consolidated schemes of the sector.
