Caffo licorice, is distinguished not only by the superior intrinsic qualities of the sweet Calabrian root, but also by the natural processing method aimed at preserving the organoleptic characteristics of the juice. Even today, as three hundred years ago, the "Calabrian" method of

extracting licorice juice involves the use of only hot water without the addition of any solvents or chemical additives. The finely sliced and ground roots are infused in

hot water long enough to yield the precious juice. Then with special separators, the solid residues are removed and concentration is carried out by evaporation until a licorice paste is obtained and brought

to the desired concentration in special cookers. The extract thus obtained is sent to extruders where drawing takes place, or it is made into breads for other

industrial uses.
