Vinification: The must is cold fermented for a week. The wine is then bottled and enriched with selected yeasts and sufficient nutrients for a refermentation in the bottle. When their action is finished, the yeasts settle to the bottom of the bottle and continue their contact action with the wine, making it more complex and long-lived. The wine develops a pressure of about 2.5 BAR
