Vinification: Testamatta Bianco is a selection from a single vineyard, Serrone, on Giglio Island. Serrone is a terraced vineyard located in the southeastern part of the island, overlooking the sea at an altitude ranging from 60 to 150 meters. The soil is very poor, of granitic origin where the vines, which are up to 100 years old, are trained with the alberello alla gigliese. The harvest began on August 18; all the grapes were picked by hand, transported in small baskets to the winery, located in the center of the island, in Giglio Castello. After destemming and a very soft pressing with dry ice, we left the skins in contact with the must for less than 1 hour. After this short maceration, the must was left for about 48 hours at low temperature in steel tanks and then transferred to new 225-liter barrels for alcoholic fermentation at 20°C. After fermentation, the wine was aged in contact with the lees for 12 months without any malolactic fermentation and then bottled.
TASTING NOTES.
Color: Straw yellow with golden highlights.
Nose: Complex bouquet of white pineapple, apple, pear and kiwi, fine notes of mussel shell.
Taste: Full-bodied, complex and fleshy on the palate, always with a very precise and energetic mouthfeel, a pleasant freshness and a mineral impression. Then, in the very long finish, salty layers, fine and barely perceptible tannin and notes of white pepper.
PAIRINGS: Excellent in combination with fish main courses, also goes well with vegetarian dishes.
