Vinification: The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small portion of Grechetto for a wine designed to age over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian wines to carry out malolactic fermentation and aging in barriques with the first vintage in 1985

Bouquet: A fascinating olfactory profile, introducing a taste with a marked verticality and sapidity, capable of preserving the Mediterranean style that has always distinguished it
Taste: The palate is in fact saline, fresh, with vanilla and slightly buttery notes that blend elegantly with hints of exotic fruit and citrus
PAIRINGS: Throughout a meal, it is exalted with countless rich seafood preparations. Also try it on first and second courses with truffles
