Vinification: Soft pressing of the berries and from the clarification of the flower must by natural decantation. Inoculating the yeasts, the wine begins a long alcoholic fermentation, at low temperature, in refrigerated stainless steel vats and in small wooden barrels (10% of the total). Aging takes place on fine lees with frequent batonnage. Maturation in the bottle lasts about ten months. The use of sulfur is limited and judicious until bottling

Bouquet: The nose offers a dense and lively extension of fragrant notes of chamomile, musk, acacia and eucalyptus adorned with honeyed puffs and nuts
Taste: The mouth is full, savory, admirably harmonious and expressive, endowed with pleasant freshness and excellent persistence
PAIRINGS: Ideal to drink with some fish appetizers, shellfish, grilled fish and stewed white meats
