Appearance: Fine and persistent perlage
Color: Straw yellow with greenish reflections
Bouquet: Ethereal, delicate, very personal for synergy between varietal aromas and yeast scents; with definite aromatic note
Taste: Full, harmonious, dry
PAIRINGS: Excellent as an aperitif, with light vegetable canapés, fresh cheeses and baked white fish
FRUITABILITY: Best served at 6°C
VINIFICATION : Its primary fermentation takes place in steel tanks at 18/19°C with selected yeasts. The new wine is kept on the noble lees for a few weeks; the next stage is the "presa di spuma," which lasts 20/25 days at 18°C. Once finished, the sparkling wine is kept on the lees for a few weeks. This is followed by tartaric stability and bottling. Staying in the bottle for final aging.
