Appearance: Fine and persistent perlage
Color: Bright straw yellow
Nose: On the nose, it shows delicate scents of white flowers and yellow-fleshed fruit, with a nice hint of pastry and a slight herbaceous reminder
Taste: Pleasant, clean and lively on the palate, it stretches harmoniously over a distinct mineral texture and exotic fruit notes
PAIRINGS: Ca' del Bosco's Cuvée Prestige pairs well with light fish or vegetable starters, simple seafood main courses and small shellfish. Excellent with fish carpaccio and sushi or even as an aperitif
FRUITY: Best served at 6°C
VINIFICATION: Ca' del Bosco's Cuvée Prestige is derived from an assemblage of berry and red grapes: it comes from 96 chardonnay vines, averaging 27 years old, 3 pinot blanc parcels, about 21 years old, and 17 pinot noir vines, averaging 19 years old. Harvesting is by hand, fermentation takes place in steel tanks, with 7 months of aging. The grapes are then blended with the reserve wines, about 20-30%. This is followed by aging on the lees for 25 months. Dosage of about 4 g/l of sugar
