Vinification: Grapes are harvested in the early hours of the morning to reap the lowering of temperatures during the night. Harvesting takes place in mid-September at advanced ripeness. The hand-picked and carefully chosen grapes, preferably spargole, are laid in 18-kg plastic crates and taken immediately to the winery.
TASTING NOTES.
Color: Clear golden yellow with greenish reflections,
Nose: Saucy olfactory sensations reminiscent of typical Biancolella scents such as apricot, raisins and dried figs, almond and peach jam.
Taste: Perfectly balanced in sweetness, acidity and smoothness, it returns its complexity to the palate in warm, enveloping floral and fruity notes
PAIRINGS: Pair with both white sauce dishes and also fresh fish dishes typical of the island.
FRUITY: Serve at 14/ 16° C.
