Vinification: A specific plot within the vineyard called "Vigna Martina" was chosen for production, that is, the one located at a higher altitude (about 400 meters); this is in order to obtain grapes with a very high aromatic potential, musts with an excellent acidic balance and wines with the characteristics we seek of sapidity, salinity and longevity. Only the free-run must resulting from the pressing cycle is used for the production of this wine; fermentation takes place at low temperatures (16°C) and during the entire processing procedure contact with oxygen was limited as much as possible, up to the moment of bottling; at the conclusion of this process the wine was aged in the bottle for 12 months.
