Vinification: As is customary, the individual plots and the three grape varieties are vinified separately in temperature-controlled stainless steel tanks. Only at a later stage is the final cuvée created, which involves blending the vins clairs of the vintage with 35% reserve wines, including a small percentage of Cuve 38, the Maison's most prestigious wine, and a final addition of a dash of Pinot Noir vinified in red, in keeping with the ancient Champagne tradition. The second fermentation takes place in the bottle according to the Champenoise Method, with a 3-year rest on the lees
TASTING NOTES.
Appearance: Fine and persistent perlage
Color: Brilliant straw yellow
Bouquet: Citrus, crisp yellow fruit, white flowers, toasted almonds and hints of pastries
Taste: Once in the mouth the bubble is creamy and enveloping, it gives notes of toasted dried fruit already perceived at the first nose and invites drinking thanks to its unmistakable refreshing and mineral power
PAIRINGS: Ideal to drink with fish appetizers, sushi and sashimi, excellent with a seafood risotto
