Vinification: Chianti Classico "Castello di Brolio" is made from 90% Sangiovese grapes, 5% Cabernet Sauvignon and 5% Petit Verdot. The vineyards of origin are located at altitudes between 250 and 450 meters above sea level, with southwest exposure. Even at harvest, the selection made on the bunches is very tight, so much so that, from year to year, it is easy for the quantity of production to vary. What does not descend, however, is quality, a fundamental prerogative of Castello di Brolio. Fermentation and maceration take place in stainless steel tanks for about fifteen days. Malolactic fermentation also takes place in the same container. Aging is about 21 months in French barriques and tonneaux.
