Vinification: The grapes for Testamatta are selected from the six best vineyards-Vincigliata, Olmo, Londa, Lamole, Montefili and Siena. Each vineyard, divided into plots, is harvested up to eight times, so that all the grapes are picked at the perfect level of ripeness. A second sorting of the grapes is done in the winery before destemming and then moving on to the soft-pressing stage. Fermentations are conducted with indigenous yeasts, in open barriques (225L), for the smaller parcels, and in 50hl barrels or steel vats for the larger parcels, with six manual punching down and pumping over per day. After 7 to 10 days of maceration, the different plots are transferred to, ninth- to tenth-passage barriques and 50hl barrels for aging for about 20 months.
TASTING NOTES.
Color: Light, bright ruby red
Nose: ahe nose shows beautiful hints of red fruits (cherries and black cherries), with hints of leather and spices.
Taste: on the palate, magnificent sip. Great acid shoulder and evident tannins. Complex, harmonious, persistent.
PAIRINGS: Toscana Rosso IGT "Testamatta" by Bibi Graetz goes wonderfully with earthy dishes, baked pastas and red meat main courses.
