Vinification: The harvest is done by hand after a twenty-one-day drying in the sun, from which only 300 kg of raisins are obtained from one ton of grapes. The wine is fermented in American oak barrels until it reaches 13% vol. It does not, therefore, belong to the Jerez Sherry category because of the too low alcohol content

Nose: The nose expresses intense aromas of baked apple, walnuts, cinnamon, almonds and dried figs
Taste: The sip is sweet and enveloping, with good supporting acid shoulder. Elegant
PAIRINGS: Pairs well as an end-of-meal wine, with blue cheeses or desserts. For a Spain-Italy twinning, pair it with the wonderful Moncenisio Blue Cheese: ideal!
