Vinification: It is made mostly from Syrah and Sangiovese grapes, harvested and sorted by hand, then destemmed and crushed before vinification by natural gravity, which takes place separately for each variety. The grapes are left to macerate on the skins in steel vats for 20 days at a controlled temperature of 26°C, and alcoholic fermentation lasts about 10 days. The wine is then placed in Allier oak barrels and, following malolactic fermentation, the different wines are blended. The wine matures in barriques for 6 months, after which it returns to steel vats for 1 month before filtering and bottling, then rests in bottles for another 6 months
