Vinification: After 45 days of drying, the grapes are crushed and fermented first in temperature-controlled stainless steel, then rest in new barriques for 36 months. Valpolicella Superiore DOC, labeled Dal Forno Romano, is completed with two years of bottle aging.

TASTING NOTES.
Color: Intense ruby red
Nose: Elegant olfactory bouquet, composed at first of hints of dark cherries and ripe red plums, then enriched by elegant hints of tar and graphite
Taste: Rich palate, driven by balanced acidity and bright tannins. Concentrated and long finish
PAIRINGS: Can accompany entire menus of earthy cuisine, as long as they are structured and flavorful. Excellent with capon casserole
