Vinification and aging: the first alcoholic fermentation takes place in stainless steel tanks with constant control of fermentation temperatures. In the spring following the harvest, the wine is bottled (tirage) and aged in contact with the yeasts for 25 months. After disgorgement (dégorgement) the bottles rest in the cellar for an additional 5 months.
TASTING NOTES.
Appearance: Fine, elegant and continuous perlage.
Color: White gold with light straw reflections, brilliant and crystalline.
Nose: Pinot Noir in its fullest expression is detected. Good structure and creamy fullness with a fresh and persistent finish.
Palate: Complex and assertive, it opens with delicate fruity, fresh and mineral notes, evolving with hints of acacia honey and dried fruit.
PAIRINGS: Ideal throughout a meal, it accompanies some typical Franciacorta dishes and enhances rice dishes, pasta, white meats, fish, fresh and medium-aged cheeses.
