TASTING NOTES.
Appearance: Fine and persistent perlage.
Color: Bronzed pink.
Nose: The nose opens with complex aromas of berries.
Taste: In the mouth it is soft, fresh and savory, with hints of raspberry, strawberry and cherry.
PAIRINGS: Perfect with shellfish, caviar and processed fish, it is ideal with cured meats and fine cheeses. Excellent with pastries.
FRUITABILITY: To be served at 4/6°C.
DESCRIPTION: It is made exclusively from the blending of the best cuvèe produced mainly with Chardonnay grapes and Pinot Noir grapes. Harvesting is conducted manually in mid-August and the grapes are subjected to soft pressing. Primary fermentation of the flower must is carried out in cold steel tanks. Subsequently, secondary fermentation takes place in the bottle, as required by the Metodo Classico, and the wine matures for at least 24 months on the lees before being released to the market.
