Vinification: Alcoholic and malo-lactic fermentation, and aging in barrique/tonneaux. Blending after one year and further aging on the lees for three years in stainless steel vats.
Description: The most ambitious representation of the vintage, so each year the most prestigious cuvée is renewed through the vision of Kellermeister Hans Terzer. The 2018 vintage allowed for ideal ripeness of each individual grape variety, so the aromas and drinkability of APPIUS 2018 are enhanced like an unparalleled dance in a truly exciting sensory experience.
TASTING NOTES.
Color: Chartreuse yellow with bright reflections of a malachite green
Nose: Intense, energetic and deep, exotic fruit (banana, melon, mango), Williams pear, white peach, rennet apple, white currant and gooseberry
Taste: The palate gives freshness, drinkability, character and recognizability. A perception of warmth envelops the palate that rounds out the otherwise pungent combination of acidity and savoriness.
PAIRINGS: Excellent with firm fish dishes such as turbot or monkfish. It goes well with a tasty seafood risotto, but also with dishes featuring wild fowl or delicate veal dishes.
