Vinification: Colore Bianco is the selection of a single vineyard on Giglio Island, that of Pietrabona, a terraced vineyard located in the southeastern part of the island with an altitude ranging from 60 to 150 meters. The vineyards, which reach up to the age of 100 years, are characterized by rocks and sands of granite origin. The training method is the alberello alla gigliese, a modified sapling, very low and close to the ground that is intended to protect the plants from the wind. In 2019 we harvested a parcel of the Pietrabona vineyard about two weeks later than usual, finding that the grapes had developed excellently, reaching a more advanced level of ripeness that brought with it a broad and interesting aromatic spectrum, as well as slightly higher alcohol levels. All grapes were harvested by hand and transported in crates to the winery, located in the small village of Giglio Castello. The grapes after destemming were softly pressed, then fermented at low temperatures in steel vats for 6-7 days. A 70% of the wine was then moved to barriques, equally divided between first and second passage, for another 10 days without thermal control and then aged in barriques in contact with the yeasts. The remaining 30%, on the other hand, completed its fermentation and aging in steel.
TASTING NOTES.
Color: Golden yellow
Bouquet: The nose is pleasantly appealing; it expresses itself with hints of orange blossom and broom, notes of yellow peach and almond paste, and iodine tones.
Taste: Fresh, savory and smooth on the palate.
PAIRINGS: Excellent paired with seafood menus, goes well with shellfish.
