TASTING NOTES.
Color: Caramel color with intense orange reflections
Nose: The nose has a broad and intense bouquet characterized by the sweet notes of honey, candied fruit, and caramel with flashes of citrus
Taste: Full-bodied in the mouth with an excellent balance between acidity and sweetness. Sweet hints of candied fruit in concert with caramel and spices, chocolate and toffee stand out. Long and harmonious finish
PAIRINGS: Perfect to drink with some aged Gouda cheese or crème brûlée.
FRUIBILITY: Serve at 10 to 16°C.
VINIFICATION : This Madeira underwent a 3-day fermentation in steel containers in contact with its skins and with natural yeasts at temperatures between 18 and 21°C. After the 3 days had passed, the master blender then added brandy as in the tradition of every Madeira, stopping fermentation at the desired sugar level.
