Nose: What is striking on the nose is its incredible finesse: it opens on notes of black cherry and cherry, and continues with spices and cocoa beans
Palate: On the palate it is extremely dynamic, with a velvety and very elegant texture. What is surprising here is the harmony of all components: body, alcohol, tannins, texture and depth. It closes with an interminable finish
PAIRINGS: A wine for special occasions, it expresses itself at its best after years of aging and is at its best with stuffed guinea fowl and the great mature cheeses of the Veneto tradition
FRUITY: Best served at 16°C (61°F)
VINIFICATION: Amarone Riserva De Buris is the reinvention of a great red. A fil rouge between tradition, territory and wine, it underscores the bond between the Tommasi family and Valpolicella: it comes from one of the territory's most exclusive cru, La Groletta, and continues its history in the De Buris villa, the oldest in Valpolicella Classica. It all starts in the highest part of the vineyard, in a 1.9-hectare parcel where yields are very low: here the bunches of grapes are selected by hand and then transferred to the fruttaio for drying. After 110 days there is crushing and subsequent fermentation in oak vats using indigenous yeasts, then the wine rests in 15/30 hl oak barrels, and during the first year malolactic fermentation is carried out. It continues resting in the same barrels for 5 years, before being bottled
