Vinification: Susumaniello "Susco," from the Apulian winery San Marzano, is made from an ancient native dark grape variety of Salento. After manual harvesting, which usually takes place in the second half of September, the best grapes are quickly sent to fermentation with selected yeasts and a maceration on the skins lasting about 10 days. Before bottling, the wine matures for 6 months in French and American oak barrels.
TASTING NOTES.
Color: Intense and bright ruby pink
Nose: The nose reveals notes of ripe red fruit, wild herbs from the Mediterranean maquis, balsamic and slightly woody nuances.
Taste: The mouth denotes a slight acid note but a certain elegance.
PAIRINGS: This wine pairs well with starters of mixed cold cuts, first courses and red meats
