Vinification: Vinification involves maceration for 10-12 days, depending on the vintage, with continuous pumping over throughout the period of alcoholic fermentation. This is followed by aging for 12 months, half in large 20 hl barrels and the other in tonneau. A robust and austere but at the same time elegant wine.
TASTING NOTES.
Color: Intense ruby red, with purple hues
Nose: The nose releases notes of black cherry and wild red fruit, followed by hints of mint, licorice, nutmeg and sweet tobacco
Taste: Full-bodied and dense on the palate, where the powerful tannins are mellowed. Appreciable acidity gives it length and fruity persistence
PAIRINGS: Goes well with rich pasta dishes, roasted and stewed meats, game, and medium-aged cheeses. Pork roast with plums.
