Vinification: Manual selection of the best bunches picked in boxes in the oldest vineyards located in front of our winery and which have the best exposure and adaptation of the vineyard to the site. Upon arrival at the winery, the grapes were destemmed and lightly crushed avoiding laceration of the skins, placed in fermentation with inoculation of selected yeasts in fermenter in
steel with cooling system and automated pumping over system. Pumpovers initiated after inoculation, in order to allow the pomace in the cap to return to immerse in the must avoiding excessive contact with oxygen, make evenly distribute and activate the yeasts, and promoting the dissolution of aromatic and coloring substances contained in the pomace itself. Alcoholic fermentation of about 15 days. After separation from the skins, the wine conducted malolactic fermentation in temperature-controlled stainless steel. At the end, the wine was racked and aged in barriques for 18 to 24 months. After bottling in wine continues its aging for not less than another 12 months in bottle.
TASTING NOTES.
Color: Intense and deep ruby red
Nose: Notes of plum jam, candied orange, cocoa, tobacco, powder and cloves are perceived on the nose
Taste: Balance is the hallmark in the mouth, an unprecedented elegance despite a pronounced tannin typical of the varietal that characterizes the sip and ensures its aging potential.
PAIRINGS: Because of its organoleptic characteristics, it is excellent paired with succulent dishes, fatty meats, braised meats.
FRUITY: To be served at 18/20°C
