VINIFICATION : Grapes, after drastic thinning in the countryside, are destemmed and softly crushed; prolonged maceration takes place in stainless steel tanks with careful temperature controls; malo-lactic fermentation takes place in small French oak barrels. Maturation takes place in barriques with a minimum stay of 12 months.
