TASTING NOTES.
Color: Deep ruby red.
Nose: Enveloping and broad bouquet, with aromas of ripe red fruit and hints of herbs. A pleasant spiciness is perceived.
Taste: The palate is firm and solid, soft and elegant, dry and velvety.
PAIRINGS: Ideal with game and roasted or braised red meats. Good with aged cheeses. Excellent with grilled pork chops.
FRUITY: Best served at 16/18°C.
VINIFICATION: Vinification is carried out in November after light drying in crates. It is made according to the traditional red system for 8 days in contact with the skins with daily pumping over. Aged for 24 months in new Allier oak barrels and 12 months in bottle.
