With its characteristic bitterish flavor, chicory was used since the Napoleonic era where the root was used as a coffee substitute. Today it is grown by us in the fields of the Sele plain harvested while still tender, stewed and preserved in oil seasoned with garlic and chili peppers so that it is ready to be enjoyed. It is a very common but often underestimated plant. Rich in vitamins with important diuretic and depurative functions, it stimulates the proper functioning of the pancreas and liver and is a panacea for digestion. In the kitchen it is used as a side dish sautéed in a pan, to stuff rustic pies, and we also offer it as an ingredient for pizza topping
