Vinification: Crushing and soft pressing. The drained must is clarified by settling at a temperature of about 2 to 3 degrees for 24 hours. Fermentation is carried out with selected yeasts and fermentation temperature of 12 to 14 degrees Celsius. After fermentation, the first racking is done in steel and before filtration and protein and tartaric stabilization, the wine rests 2 months of botonnage to give plumpness in the mouth.
TASTING NOTES.
Color: Faint straw yellow with greenish reflections.
Nose: The aromas are very intense with pleasant notes of white fruit and citrus with a sensation of exotic fruit.
Taste: In the mouth we notice its good acidity and minerality.
PAIRINGS: We recommend pairing with fish, white meats and medium-aged cheeses
