Description: Gin distilled in a Holnstein copper still. The botanicals, which grow wild in the areas near the distillery, are hand-picked and then steeped overnight in neutral spirit before distillation the next day. Finally, the whole is diluted with water from nearby Mount Wicklow to be brought to a strength of 41 percent.
TASTING NOTES.
Color: Transparent and crystal clear
Nose: The nose releases spring notes, among which the aroma of juniper and citrus are clearly recognizable.
Palate: Floral notes emerge on the palate, more summery, then those of autumn fruit and finally spicy notes more suited to winter.
