Vinification: Alcoholic fermentation takes place in stainless steel wine vats at controlled temperature, with emerged cap with daily pumping over, then continues with submerged cap so as to promote the extraction of color and aromas, prolonging maceration for about ten days. Malolactic fermentation takes place immediately after alcoholic fermentation. Aging is 18 months in French oak barrels, 50% new and 50% one-year-old, and 6 months in bottle.
TASTING NOTES.
Color: Very intense and vivid ruby color with obvious purplish highlights.
Nose: Broad and clean on the nose, characterized by memories of small ripe red berries, and marked by vegetal nuances and hints of licorice and chocolate.
Taste: The sip is harmonious and well-structured, rightly tannic and persistent
PAIRINGS: Goes well with red meat dishes or noble poultry. Excellent with duck with orange.
