Vinification: Alcoholic fermentation takes place in stainless steel wine vats at controlled temperature, with emerged cap with daily pumping over, and then continues with submerged cap so as to favor the extraction of color and aromas, prolonging maceration for a few days. Malolactic fermentation takes place immediately after alcoholic fermentation. Aging is 24 months in French oak barrels (50% new, 50% one-year old) and 12 months in bottle.
TASTING NOTES.
Color: Very intense garnet red color with purplish highlights
Nose: Clear, intense nose with notes of small red fruits such as blueberry, black cherry and currant; floral violet and spicy black pepper.
Taste: Full, warm and slightly dry palate with fruity finish of blackberry and plum.
PAIRINGS: Pairs well with red meats, game and aged cheeses
FRUITY: Best served at 16/18°C
