Vinification: meticulous cultivation operations, including very short pruning, measured "green" interventions and early thinning result in excellent grapes that are harvested by hand and subjected to careful sorting. After a maceration of 8 to 10 days, and only when the aromas correspond to balanced analytical data, the passage into steel containers for the malolactic process takes place. In the spring following the harvest, it is bottled, and after aging for 3 months, it is released to the market.
TASTING NOTES.
Color: ruby red
Nose: the nose retains the delicate aromas typical of underbrush such as small fruits, black currants and ripe blackberries
Taste: elegant and full-bodied
PAIRINGS: excellent as an accompaniment for unprocessed fish dishes, eggs, white meats and vegetable pies. It can also be served as a lively aperitif.
