TASTING NOTES.

Taste: The palate is an ever-changing discovery, depth of drinkability and intact juiciness, flavors of ripe fruit, black cherry, pepper and licorice and cocoa

PAIRINGS: Perfect to drink with pasta with sauce, red meat stews, game and blue cheeses.

FRUITY: Best served at 18 to 20°C.

VINIFICATION: Fermentation and maceration in temperature-controlled stainless steel, aging 26 months in chestnut and oak barrels. Followed by an additional 12 months of aging in bottle.
