Vinification: After fermentation, the wine seeks its balance first in cement tanks and then in the bottle. After a period of one year it is ready to tell an identifiable and timely expression of Valpolicella Classico.
Description: Wine from the vineyards of Tenuta Novare in Valpolicella Classico. Vineyard composed of two terraces located above the southwest-facing Novare Mine shaft, in which iron and manganese (pyrite) were mined until the early 1900s. It is the Cru of Novare that can give a Valpolicella of extraordinary pleasantness.
TASTING NOTES.
Color: Bright ruby red.
Nose: Nose characterized by notes of fresh fruit, cherry, berries, with elegant hints of white pepper.
Taste: Savory, graceful mouthfeel with long persistence and sapidity.
PAIRINGS: Wine to pair with rich dishes of aged cheeses and meats with intense flavors, preferably roasted.
