TASTING NOTES.

Color: Intense ruby red

Nose: Has a broad and complex bouquet of blackberries in alcohol, sour cherries, currants, ripe plums, spicy spicy tones of turmeric and cumin, whiffs of coffee and bitter chocolate

Taste: Rich and powerful, with dense, well-distributed tannins and with freshness and savoriness well balanced by a never intrusive caloric note

PAIRINGS: A great red that accompanies stuffed lamb, roast mutton and stuffed pork chops; also excellent with savory first courses in island tradition and with aged cheeses.

FRUITY: Best served at 16/18°C.

VINIFICATION: Vinification with temperature-controlled maceration at 24° to 28°C. After racking it is put into French oak barrels where it undergoes malolactic fermentation and ages for at least 12 months.
