Vinification: Berlucchi's "Palazzo Lana Extreme," is an important and long-lived Franciacorta Extra Brut Riserva DOCG. A blanc de noir that is made from pinot noir grapes from two high-density planting vineyards in Borgonato: Quindicipiò, on the hillside, and Brolo, near Berlucchi's Palazzo Lana. It is a wine made with great care, the "heart" of the must flower is vinified in steel and a part is aged in oak barrels for six months sur lie, in the spring of the year following the harvest the cuvée is made, re-fermentation in the bottle begins and a stay of at least seven years on the lees, and then another six months after disgorging
TASTING NOTES.
Appearance: Very fine and persistent perlage
Color: Straw yellow
Nose: The nose expresses the quintessence of Extra Brut: wide and deep olfactory sensations, all played on hints of small red fruits, currant and wild strawberry, candied yellow fruits and bread crust
Taste: In the mouth it is lively, decidedly fresh, characterized by a certain depth of flavor that accompanies its extraordinary unfolding to a closure of impeccable elegance
PAIRINGS: A great aperitif, it pairs very well with hors d'oeuvres based on cured meats. Also excellent with a risotto with pigeon ragout
