Vinification: The base wines of Cuvée Prestige are the result of careful grape selection and expert vinification conducted in full respect of the Ca' del Bosco Method. The grapes, hand-picked in small boxes, are graded and chilled. Each bunch is selected by expert eyes and hands, and then benefits from exclusive "berry spas": a special system of washing and hydromassage of the bunches consisting of three soaking tubs and a drying tunnel. After crushing in the absence of oxygen, all the musts of the base wines ferment in thermo-conditioned steel tanks and remain there until the following March. Seven months of aging are then needed for the wine to clarify, mature and bring out the character of the original vineyards to the fullest. The wines are then expertly blended in the "magic rite" of cuvée creation. Only after aging on the lees for a minimum of 2 years can this Franciacorta express all its richness and identity. Dégorgement takes place in the absence of oxygen, using a unique system designed and patented by Ca' del Bosco. This avoids oxidative shock and further addition of sulfites. It makes our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked to ensure traceability.

 

TASTING NOTES.

Appearance: Fine and persistent perlage.

Color: Golden yellow.

Nose: On the nose, it shows delicate scents of white flowers and yellow-fleshed fruit, with a nice hint of pastry and a slight herbaceous reminder.

Taste: Pleasant, clean and lively palate, harmoniously lying on a distinct mineral texture and exotic fruit notes.

PAIRINGS: Generally served at the beginning of a meal, paired with various hot delicacies and appetizers, it lends itself to drinking as an accompaniment to risottos, seafood first courses and grilled fish.
