PAIRINGS: Pair with seafood and shellfish, freshwater fish cooked in salt, pasta dishes (perfect on spaghetti with tomato sauce and fresh basil)

WINE-MAKING: The grapes are macerated on the skins for 6 hours and afterwards. A part ferments at a temperature that is lowered and controlled until it reaches 18° and then remains on the lees until the following spring. The remaining part, which can be roughly estimated as 12%, ferments in barriques
