Vinification: Manual harvest, whole cluster pressing, alcoholic and malolactic fermentation in steel vats. Bottle aging for at least 4 years is carried out in crayères (traditional chalk cellars)
TASTING NOTES.
Appearance: Fine and persistent
Color: Straw yellow
Nose: Detects a deep hint of fruity aromas (citrus, dried fruit)
Taste: The palate is full-bodied and dense with freshness where the taste of the fruit is rediscovered
PAIRINGS: A structured, fragrant champagne, suitable for aperitifs or as an accompaniment throughout a meal

THE PRODUCER: During the period of the French Revolution, Basle Penet bought his first vineyard plots around Verzy and sold his harvest to merchants equipped with a pressing plant. In 1929 the family business, under the management of Louis-Gilbert Penet, decided to purchase its own press and adhere to the Récoltant Manipulant statute. He was succeeded by his son Jean-Marie, who brought the Jean-Marie Penet brand of Champagne to market. Years later his daughter Florence married Jean-Paul Lepreux and, with their union, the current Champagne brand was born. Currently, the winery is run by his daughter Virginie and son-in-law François and, after 8 generations, even today, everything is done manually while respecting ancestral traditions, preserving the typical methods of Champagne production. All the production, whose grapes come from vineyards located in Verzy and Verzenay, boasts the Grand Cru classification and all the wines mature optimally in preciously preserved 19th-century crayères.
