Vinification: Once harvested by hand, the grapes were vinified in temperature-controlled (max 26°C) stainless steel tanks and fermentation was conducted spontaneously. Maceration on the skins allowed a perfect extraction of the

polyphenolic substances, assisted by frequent pumping over in the initial stages of fermentation, interrupted by delestage in the intermediate phase, and then resumed in the final phase. Malolactic fermentation was completed in steel before winter. Afterwards, the wine was left to mature in 50 hL oak barrels for 24 months. It then rested in

bottle for a few months.

Description: Located in a historic area for the production of Vino Nobile di Montepulciano and considered one of the most vocated, Calimaia lies on the soft hills between the Val di Chiana and Val d'Orcia. The vineyards, arranged around the winery's hillside, enjoy an elevation of 300 meters above sea level and vary in exposure and soil type, allowing

enhance the value of each grape variety cultivated.
