Vinification: After a short cold maceration, the grapes are gently pressed and the must is fermented in temperature-controlled stainless steel tanks. The whole process takes place in total oxygen protection to avoid oxidation. The wine matures for several months in stainless steel tanks on the fine lees.

TASTING NOTES.

Color: Straw yellow with golden reflections.

Nose: Very pronounced bouquet Mineral notes, almost ferrous, introducing typical scents of lychee, elderberry, white peach and delicate notes of cinnamon

Taste: Deep and vibrant, with pleasant mineral sensations and great aromatic persistence

PAIRINGS: Recommended paired with soft aged cheeses (castelmagno, gorgonzola), lobster and shrimp. It also pairs excellently with Asian dishes.

FRUITY: Serve at 8/10°C
