Vinification: Rosso di Montalcino di Casanova di Neri is produced from dedicated vineyards, with its own mass selection of Sangiovese. Harvesting is done manually in October, with careful sorting of the grapes before and after destemming. Fermentation takes place spontaneously in temperature-controlled steel truncated conical vats, and maceration is assisted by frequent punching-down (punching-down is the operation of breaking up the cap of pomace that rises to the surface pushed by the 'carbon dioxide produced in the fermentation process, and their re-immersion in the liquid). The wine then ages 18 months in barrels.
TASTING NOTES.
Color: Brilliant ruby red
Nose: The nose has lots of fruit, hints of Mediterranean scrub and a slight sweet spice.
Taste: The sip is ample, quite fresh, with well-managed tannins.
PAIRINGS: Good served at about 18°C with pici with white Cinta ragu, or with mixed grilled beef and pork.
