Vinification: Bruno Paillard's Champagne Blanc de Blancs is made from the first pressing of Chardonnay grapes sourced exclusively from Grand Cru villages. Twenty-five vintage reserve wines blended since 1985 are added to the base wine. Following fermentation, it stays on the aging lees for 4 years and for at least another 8 months after disgorgement
TASTING NOTES.
Appearance: Very minute and persistent perlage
Color: Faint golden yellow
Nose: Its aromas touch on the iodine and saline sensations typical of Grand Cru vineyards and then offer space for citrus and white flower scents, with a pleasant surprise given by the arrival of toasted almond notes that develop with oxygenation
Taste: The entry is vibrant and fresh, with an almost chalky minerality that preludes to a broad and creamy finish
PAIRINGS: Wonderful in the company of oysters and seafood, it can be paired with all seafood dishes
