THE PRODUCER.
Under a dazzling sun, flooding the land with warmth, while the eyes lose themselves among centuries-old olive trees and generous vineyards caressed by the wind mitigated by two seas, in the heart of Salice Salentino, stands Castello Monaci. The Castle and Winery are surrounded by about 3,000 olive trees and 150 hectares of vineyards that represent one of the most̀ significant models of Salento's innovative viticulture. The work in the vineyards is personally supervised by Vitantonio Seracca Guerrieri, president of the estate, who for years has been making choices aimed at enhancing the value of native Salento grapes. The white winery near the Castello, built by the Memmo family in the 1970s, offers new refrigerated crushing systems through thermo-conditioned steel tanks. Through grape selection and careful winemaking techniques Leonardo Sergio, the winery's winemaker, signs the qualitỳ of Castello Monaci. The vineyards are trained by spurred cordon. Below a first clay layer of about 1 meter, the roots meet a wide band of tuff, a typical porous and friable white stone. In periods of great drought̀ it acts as a water resource for the vines, giving sapiditỳ and minerality to the wines.
