Vinification: Grapes for Color were selected from the four most suitable vineyards: Lamole, Vincigliata, Olmo and Siena. Each vineyard is harvested up to eight times, so that all the grapes are picked at the right point of ripeness. After an initial selection in the vineyard, the grapes are selected again once they arrive at the winery. After destemming, they are softly crushed and then transferred to open barriques for fermentation, taking great care to keep each parcel separate from the others. Spontaneous fermentation lasts about two weeks with an additional week of maceration on the skins, during which 6-8 manual punching-downs per day are carried out. Once fermentation is complete, the wine is moved to barriques, where malolactic fermentation takes place. Each parcel is aged separately for nearly 20 months before the final blend is decided.
TASTING NOTES.
Color: Deep ruby red
Nose: The nose opens with intense sensations of red fruits, enriched by notes of leather and spices.
Taste: Vibrant and powerful on the palate, with good structure and freshness accompanying toward a long, lingering finish.
PAIRINGS: Perfect with first courses with sauces and meat sauces, it is ideal with red meats, stews, game and aged cheeses.
